The pride of G. Marquis is our collection of ultra premium, 100% Canadian VQA Icewines from the Niagara Peninsula. G. Marquis respects the careful choices vital to making a true, authentic Icewine. Naturally frozen on the vine, grapes are harvested by hand from snow-covered vineyards after dark in the heart of winter when temperatures fall below -10°C. The frozen fruit is crushed immediately, capturing a tiny amount of sweet, precious nectar from each grape and then slowly fermented for months with expert care.

Fermentation of base wine conducted at 15-18°C in stainless steel over 15 days. Wine subsequently aged for a full year in stainless steel. Base wine cold stabilized prior to undergoing secondary fermentation conducted in-bottle over one year with EC1118 yeast strain using traditional Méthode Classique. Dosage of G. Marquis Cabernet Franc VQA red Icewine. Final disgorgement conducted by hand.

  • Winemaking Notes: Grapes late harvested at 24.0° Brix. Juice cold clarified prior to inoculation with VL3 yeast strain. Fermentation conducted in stainless steel at 15-18°C over a period of three weeks. Fermentation arrested at 68.2 grams per litre of residual sugar. Wine aged for six to eight months in stainless steel. Wine cold clarified and cold stabilized prior to bottling.
  • Tasting Notes: Fruit-forward in character with intense notes of fresh apricot and peach complemented by floral and tropical fruit undertones. Its enticing sweetness is perfectly offset by a zesty backbone of fresh citrus-like acidity producing a rich yet cleansing mouthfeel. Medium-bodied in nature, its finish is long and lasting.
